Organic apples since 1985.

Results of these past years:
 
From 1984 until today, we have seen a lot of water passing under the bridge, a lot of experience, many mistakes. There is no repetitive technique: two identical situations never occur in following years. Great difficulties started after the first two or three years since the introduction of biological cultivation techniques. It was very hard to just "wait and see", and there were no great experiments to rely on. But this helped us sharpen those gifts that are fundamental in biology and more important than allowed products: sensitivity, insight, and good eye.
After following each advance with patience and attention, learning how to wait and see, now certain equilibria have been established within the firm
.





Furthermore, we paid great attention to the information that scientific research has published regarding soil, its equilibria, its mechanisms, and its flora and fauna. Now, such a lively, populated, and populous world has its own names and figures. One gram of soil can contain over 10 million bacteria. A stratum of microbes located around the roots of a healthy adult plant can consist of 100 to 200 billion microbes. The life span of one of these microbes corresponds to about half-hour. In the soil, what used to be alive gets buried for decomposition, which celebrates the birth of a new life: the rebirth of organic matter for the life and growth of a plant. From death comes life.






Almost two-thirds of our firm deal with an extremely difficult variety: the Golden Delicious, a true and very delicate "gentle lady". This kind of apple is looked at with suspicion on our market, and it is also quite ousted because everybody is aware of the technical difficulties that arise when trying to produce this apple without intervening with synthetic products. We are very proud of the results we have achieved on such a difficult yet good variety. The Golden Delicious has qualitative features which substantially differ on the basis of its area of origin; the mountain Golden Delicious is definitely excellent.










All this has been made possible for us by all those elements that the fruit has obtained from the plant, which have made it resistant to a whole series of damages that occur after the fruit has been picked. Its specific weight above the average also tells us that there is a higher quantity of dry matter, therefore the fruit will stay more crunchy over a longer period of time, that is it will rot less and more slowly.

Among our strongest points is the presence of a great variety of flora and fauna. Our soils host endless varieties of annual herbs that we leave in the fields with their inflorescences for as long as possible. In fact, we try for the most part to limit cuttings because of natural attraction to insects. After the cutting, we leave herbs and flowers on the ground to help the making of humus for the soil. Almost all insects have shared spaces in a well-balanced way, while plants have developed a certain degree of resistance.



 

A plant or fruit in good health need all that, which only the ability of Nature can create; soil fertility, for instance, is impossible to recreate synthetically, and it is easily understandable how this ecosystem can be easily altered by the intervention of a chemical, whether it is a fertilizer or a herbicide.






All that we have obtained from our soils and plants leaves a mark on the product of all this work: our fruits. You can feel, taste, and see in the fruit all the work we have done. Besides taste and aroma, a clear sign of what has occurred, that is the result of our work, is also to be found in the preservability of our fruits: we preserve our apples in our cold stores without any problem at all until late summer, with no need for the treatments that such fruits would normally undergo in order to avoid the problems that can arise over long periods of preservation.
